FRESH PEACH OR APPLE MUFFINS 
1 c. peeled & chopped fresh apples or peaches
1 tsp. lemon juice
1 c. milk
1 egg
1/4 c. Crisco, melted
2/3 c. sugar
1/2 tsp. salt
1/4 tsp. cinnamon
3 tsp. baking powder
2 c. flour

Sprinkle the fruit with lemon juice and set aside. Mix remaining ingredients, adding flour last. Fold in fruit just before baking. Fill greased muffin tins 2/3 full and bake at 450 degrees for 20 minutes. Yields 20-24 regular size muffins.

These are pretty good, with a few changes. I used canola oil instead of Crisco. Yield was 12 normal muffins, I baked them 19 minutes at 400°F and they're perfect.

Next time I will add more cinnamon and maybe a little nutmeg.
