FRESH APPLE MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 c. vegetable oil
1 egg
1/2 c. milk
1 c. grated raw apples

Sift together flour, sugar, baking powder, salt and cinnamon. Set aside. Combine oil, egg and milk. Add to dry ingredients. Add apple and stir just until ingredients are blended. Fill greased muffin pans 2/3 full and sprinkle with topping. Bake at 400 degrees for 15 to 25 minutes.

TOPPING FOR APPLE MUFFINS:

1/3 c. brown sugar
1/2 tsp. cinnamon
1/3 c. chopped nuts

Mix brown sugar, cinnamon and nuts together and sprinkle over muffins.

Wonderful. Even without the topping. I made them gluten free and used rice flour instead. And cut large chunks of apples and put them on top before I baked them.

Used chunks of apples instead of grated & lemon zest. Also, extra cinnamon. Nuts not used, and recipe seems to lack that.

I added walnuts to mix, more cinnamon, fresh nutmeg, homemade chunky applesauce and subbed WW pastry flour. Skipped the topping. Great!
