QUICK LASAGNA
1 lb. hamburger
1 (1.5 oz.) pkg. spaghetti sauce mix
1 c. cottage cheese
2 c. uncooked noodles (med. size)
1/2 tbsp. basil
1/2 tbsp. parsley flakes
1/2 tsp. salt
1 can stewed tomatoes, (sm.), put in blender to get rid of chunks
1/2 c. water (rinse out blender)
1 c. or more of shredded sharp cheese (I like lots of cheese)

In a skillet (large), brown meat and drain. Layer in large kettle: meat, spaghetti mix, cottage cheese, noodles. Sometimes I put a layer of cheese over noodles. It really doesn't need to be layered, because I stir it all up so the hamburger doesn't burn.

Mix spices, salt, etc., and sprinkle over noodles. Remember to break spice leaves in the palm of your hand to bring out the flavor. Put the stewed tomatoes in the blender to break up the chunks and rinse with water. The liquid should be visible, but do not cover. If it seems you are short tomatoes, add a blob or two of catsup.

Cover and put over medium heat (on top of stove) until it comes to a simmer. Let it simmer for 35 minutes or until noodles are done. Sprinkle rest of cheese, turn off the stove and let stand for 15 minutes.
