QUICK `N EASY LASAGNE 
1 lb. ground beef
1 can (16 oz.) stewed tomatoes
1 can (12 oz.) tomato paste
1/2 tbsp. salt
1 lb. ricotta cheese
2 eggs, beaten
1/4 tsp. pepper
8 oz. lasagne, cooked & drained
8 oz. mozzarella cheese slices

Brown beef in a large heavy skillet, stirring frequently. Pour off drippings. Stir in tomatoes, tomato paste and half of the salt; cover and simmer for 30 minutes.

Mix ricotta cheese with eggs and rest of salt & pepper. Place 1/3 of sauce in a 13 x 9 x 2 inch baking dish. Top with half the lasagne. Add half the ricotta and half the mozzarella. Repeat with sauce, lasagne and cheese. Top with last portion of sauce. Bake at 350 degrees for 30 minutes. Let stand for 10 minutes before cutting.
