FRESH PEACH PIE 
5 c. peeled fresh sliced peaches
3/4 c. sugar
2 tbsp. quick-cooking tapioca
1 tbsp. lemon juice
1/4 tsp. cinnamon
Few grains of salt
1 tbsp. butter, cut into bits
Pastry for 2-crust 9-inch pie
1 tsp. sugar

Heat oven to 400 degrees. Mix first 7 ingredients in 2-quart bowl. Let stand while making pastry. Put first mixture into shell and cover with the top crust. Prick holes for air in the top crust and then brush it (or use fingers) with cold water. Sprinkle the teaspoon of sugar over the crust. On lowest oven rack, bake 40-50 minutes.

You may use 3 cups fresh peaches and 2 cups of blackberries for variety.
