WHITE CHOCOLATE FUDGE 
1 (8 oz.) pkg. cream cheese
4 c. sifted powdered sugar
1 1/2 tsp. vanilla extract
12 oz. pkg. vanilla coating (melted)
3/4 c. chopped pecans

Beat cream cheese at medium speed with electric mixer until smooth. Gradually add sugar and vanilla, beating well. Stir in candy coating and pecans. Spread into buttered 8 inch square pan refrigerate until firm. Cut in small squares. Yield: 2 pounds.

Very smooth, doesn't turn sugary. I added a variation by substituting 1 tsp. peppermint extract for vanilla, 1/2 c. crushed peppermint sticks for pecans. Was a big hit.

This was the first time that I've EVER made fudge...I remember my mother always saying that hers was ALWAYS gritty...this one isn't...way so simple...and easy to do...the only thing that I did is I used white chocolate chips and I used some butter to help melt and melted it on low and SLOW...and then I poured the creamed cheese, vanilla and confection sugar in the heated chocolate and used my mixer on low made certain not to scratch... and then folded the nuts into the mixture after I was certain it was smooth! NO Grit here!
