THUMBPRINT COOKIES 
2 1/2 c. butter
1 1/4 c. brown sugar
5 eggs, separated
1 tbsp. vanilla
5 c. flour
1 tsp. salt
4 c. chopped pecans or walnuts
2 1/2 c. strawberry jelly

Mix together thoroughly butter, sugar, egg yolks and vanilla. Sift together flour and salt. Fold into wet ingredients. Form into 1 inch balls. Dip in slightly beaten egg whites. Roll in chopped nuts. Place on ungreased cookie sheet and bake at 375 degrees for 5 minutes.

Remove from oven and press thumb gently on each cookie. Return to oven and continue to bake for 7 or 8 minutes. Cool. In each thumbprint place bit of jelly. Yields: 6 dozen cookies.
