2 c. sugar
2 eggs
1 1/2 c. oil
1 tbsp. vanilla
2 c. coconut
1 c. dates, chopped
1 c. pecans, chopped
3 c. apples, diced
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon

Cream oil and sugar; add eggs one at a time. Measure 2 cups of flour and add. Stir in soda, salt and cinnamon. Add to creamed mixture with vanilla; beat. Fold in apples, dates, pecans, and coconut which has been dredged in 1 cup flour. Pour into well greased and floured tube pan. Bake 1 1/2 hour at 325 degrees. Freezes well.
