HAM AND CHEESE PIE 
1- 9 in. unbake pie shell
2 c. ham, cubed
2 c. (8 oz.) monterey jack cheese, cubed
2 eggs
2 tbsp. parmesan cheese
2 tbsp. parsley

Place in pastry shell the ham and cheese cubes. Mix together the remaining ingredients and pour mixture over ham and cheese in pastry.

Bake at 325°F for 50-60 minutes. Can also substitute chopped green pepper or chives for parsley if desired.
