GOOEY BUTTER CAKE 
1 pkg. yellow cake mix
1 stick (1/2 c.) butter
1 egg

Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9x13 inch cake pan.

GOOEY BUTTER:

1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 (1 lb.) box confectioners' sugar
1 tsp. vanilla

Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture, spreading to the edges.

Bake at 350°F for 35 minutes.

Instead of yellow cake mix try pound cake mix, and sprinkle chopped nuts over top before baking. When cake is cool sprinkle more confectioner's sugar on top.

When it spice time, usually at Thanksgiving, use spice cake mix instead of yellow! I add a nuts to the crust, and a little more cinnamon all around...Yummy!!

I love this recipe. The first time I made it, it didn't turn out right, but then I found out I need to make sure the cake crust goes up the sides a little to hold in the mixture better. Also up here in the altitude I add just a tiny amount of flour in the custard mix and have to bake it for 15 min longer, tastes the same as it was made in lower elevations.

This is for Kathy from Kansas... I added the apples... It is fabulous... Except.... Did you bake it longer? I baked mine for 40 minutes and it is still too gooey!! (no pun intended) we have to eat it out of the pan, cannot even pick up the center pieces. The edges cooked up good. Adding the apples was an awesome idea... I will just bake it longer next time. Thanks for the tip though!! :o)

After I put the cake layer in the pan, I put a layer of chocolate chips, then add the cream cheese layer. YUM. My family loves it that way.

My Mother-In-Law and I have made a game out of altering this recipe! We have done Lemon Gooey Cake where you use a Lemon cake mix and then put lemon juice and lemon zest (from one lemon) in the cream cheese topping. We also make a coconut version with a coconut cake and coconut shavings in the cream cheese part. I'm about to try a butterscotch version with caramel cake mix and butterscotch morsels melted into the creamcheese part. Chocolate did NOT work for us, just FYI.

Again I tried something new with this recipe. It's Thanksgiving tomorrow and I like the gooey butter cake recipe so well with the apples I decided to try something else. I exchanged the yellow cake mix for Pumpkin Muffin or Bread mix. No apples this time but I thought it might be good with them. OMG my family love it. Now if I can keep them out of it till tomorrow....
