1 pkg. chocolate cake mix

Bake in muffin pan lined with baking cups. Remove cakes from pan; cool completely.

Prepare scoops of ice cream ahead. Freeze on cookie sheet, then store in large bowl. Just before serving, place a scoop of ice cream on each cupcake. Decorate with two chocolate sandwich cookies for ears. (Optional: Can use chocolate mints for ears.)

Use small black candies for eyes, red for nose, black string licorice for whiskers. A small colorful bow attached to a toothpick may be used for Minnie Mouse. Serve immediately.
