MEAT CROUQUETTES 
2 c. ground cooked meat
1 tsp. finely chopped onion
1 c. plain white sauce
1 egg
1 tbsp. water
Fine bread crumbs

Mix meat and onion, season to taste with salt and pepper. Chill mixture, shape into balls, beat egg with 1 tablespoon water, roll croquettes in bread crumbs, dip in egg, again roll in crumbs. Fry in deep fat until light brown. Drain on paper. Serve with a sauce.
