SCALLOPED CORN 
1 can regular corn
1 can creamed corn
1 pkg. Jiffy corn muffin mix
1/2 c. chopped onion
1 stick butter
3 eggs
Grated Cheddar cheese
Salt & pepper to taste

Saute onion in butter. Add to corn. Beat eggs well and add Jiffy mix. Pour into greased 9 x 13 inch pan. Cover with Cheddar cheese. Cover with foil, may uncover last 10 minutes (makes it crusty). Bake at 350 degrees for 45 minutes.
