PEPPERONI MUSHROOM NIBBLES 
3/4 lb. pepperoni, sliced 1/4" thick
4 cans button mushroom, drained
1/4 c. Italian bread crumbs
2 tbsp. grated Parmesan cheese
1 tbsp. dried parsley
1/4 tsp. oregano
1 egg, beaten with 1 tsp. water
Toothpicks

Preheat oven to 425 degrees. Thread a pepperoni slice, mushroom and another pepperoni slice on toothpicks.

Combine bread crumbs, Parmesan cheese, parsley and oregano in a small bowl. Dip nibbles in egg, then in bread crumb mixture. Put on a rack over a shallow pan and bake about 10 minutes or until brown. Makes about 36.
