OLD FASHION PINEAPPLE SKILLET
CAKE
 
3 eggs, beaten lightly
1-1/2 c. white sugar
1/2 c. unsweetened pineapple juice
1-1/2 c. flour
1-1/2 tsp. baking powder
1 tsp. vanilla
8 slices pineapple
8 maraschino cherry
1 c. brown sugar
3 tbsp. butter

Melt in iron skillet brown sugar and butter. Top with pineapple slices and place a maraschino cherry in center of each slice. Beat eggs, add sugar slowly, mixing well; add pineapple juice and flour. Pour mixture over pineapple.

Bake at 350°F for 45 minutes. When done, invert on plate. Cool and serve with Cool Whip.
