GLAZED PERSIMMON BARS | |
1 c. persimmon pulp 1 tsp. baking soda 1 c. sugar 1 egg 1/2 c. oil 1 1/2 tsp. lemon juice 1 1/2 c. flour 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 c. nuts 1 c. raisins 1/4 c. flour Add soda to persimmon pulp. Set aside. Cream sugar, egg, oil. Add lemon juice, flour, salt, cinnamon, nutmeg. Add pulp and blend well. Add raisins, the 1/4 cup flour, and nuts. Spread in 10 x 15 greased and floured pan. Bake for 25 minutes in 350 degree oven. Glaze with 1 cup powdered sugar and 2 tsp. lemon juice, beaten together. Cut into bars. |
