RICE PUDDING WITH FRUIT TOPPING 
3 c. cooked rice, cook 1 c. rice as per pkg. directions
4 c. milk (1%, skim)
2/3 c. sugar
1/4 tsp. salt
1/2 c. egg beaters
2 tbsp. butter
1 tsp. vanilla

Combine rice and 3 cups of milk, sugar, and salt. Cook, stirring occasionally, until thick and creamy (about 15 minutes). Blend in remaining 1 cup milk and egg beaters. Cook about 2 minutes longer. Add vanilla and butter. Turn into serving bowl and top with fruit sauce.
