CREOLE CORN 
1/3 C chopped celery
1/3 C chopped green pepper
2 tsp olive oil
1 pkg (10 oz) frozen whole kernel corn, defrosted, OR 1 can (12-16 oz) drained
1 can (8 oz) tomato sauce
1 can (4 oz) mushroom stems and pieces, drained
1 tomato, peeled and chopped
2 tsp brown sugar
1/2 tsp onion powder
1/8 tsp garlic powder
1/8 tsp salt
Dash black pepper
1 tbsp catsup

In 1 1/2 qt. casserole, combine celery, green pepper and oil. Cover. Microwave at High 2 to 2 1/2 minutes or until tender.

Stir in corn and remaining ingredients. Cover. Microwave at High 2-3 minutes or until thoroughly heated, stirring once.

Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
