EGGLESS TOFU SALAD 
1 lb. firm tofu, crumbled
3 scallions, minced
2 med. carrots, grated
1 stalk celery, minced
1/2 c. mayonnaise
Salt, pepper, tamari, garlic, basil

Dry and crumble tofu. Place it in a clean kitchen towel, gather the corners together and twist towel until all water is out. Mix all ingredients except mayonnaise and spices, gently. Mix mayonnaise and spices separately, then add to the tofu mixture.
