COLD OVEN POPOVERS | |
6 egg whites 3 tbsp. oil 1 tbsp. butter, melted 2 c. skim milk 2 c. sifted flour 1/2 tsp. salt Beat egg whites lightly with fork and combine with butter, oil and milk. Place flour and salt in a large mixing bowl. Add liquid gradually, beating at high speed with an electric mixer for a minute or two. Thoroughly oil 12 large or 18 medium-sized custard cups. Fill each half full of batter and place in a COLD oven. Turn on oven set at 400 degrees and leave in for 45 minutes. DON'T PEEK. I usually poke holes in popovers after 45 minutes and leave in oven 5-10 minutes more. |
