ZUCCHINI FANCY CAKES 
4 lg. eggs
1/4 c. mayonnaise
1/2 c. flour
1 tsp. lemon juice
1/2 c. Parmesan cheese
1 sm. onion, finely chopped

Beat together above ingredients. Add:

4 c. zucchini, shredded
Salt & pepper to taste

Drop by spoonfuls in well seasoned pan (to make dollar size cakes). Great finger food for children. Can be served plain or with salsa or sour cream (no syrup).
