PISTACHIO CHEESE BALL 
7 oz. Gorgonzola cheese, room temperature
1 oz. grated Parmesan cheese
1 tbsp. minced onion
3 tbsp. whipped cream cheese
2 tbsp. chopped flat leafed parsley
1 oz. finely ground pistachio nuts

Using for, in small bowl, mash cheeses together; add parsley and onion; stir to combine. Shape cheese mixture into a ball. Wrap in plastic wrap and refrigerate until firm, about 30 minutes. On sheet of wax paper or paper plate, spread nuts. Roll cheese ball in nuts until ball is coated. Transfer to serving platter. Serve immediately or cover and refrigerate until ready to serve. Each serving equals: 1 protein, 40 optional calories. Makes 8 servings.
