AVOCADO SALAD 
3/4 c. olive oil
1/4 c. wine vinegar
1 1/2 tsp. salt
1/2 tsp. ground pepper
2 tsp. paprika
3 tomatoes, diced
1/2 c. chopped scallions
2 tbsp. minced parsley
1/8 tsp. dried ground chili peppers
3 ripe avocados

Mix together the oil, vinegar, salt, pepper and paprika. Toss together tomatoes, scallions, parsley and chili peppers. Cut the avocados in half lengthwise. Cut the pulp away from the skin gently, but leave it in the skin. Fill with tomato mixture and pour dressing over. Serves 6.
