SPANISH RICE 
1/4 lb. bacon, fried crisp and crumbled
1 medium onion, chopped
1 medium green pepper, chopped
1 1/2 c. uncooked rice
1 (28 oz.) can tomatoes
2 1/2 c. water
1 tsp. salt
1/2 tsp. pepper

Fry bacon in skillet until crisp. Remove strips and retain grease. Add onion and pepper and sauté lightly. Push to one side. Add rice and brown, stirring often. Reduce heat. Add remaining ingredients along with crumbled bacon and simmer 30 minutes or until rice is tender. Fluff with fork.
