SPANISH CORNBREAD | |
1 cup cornmeal 3 tbsp. baking powder 1/4 cup sugar 1 egg 1 tsp. salt 1 cup milk 1 cup all-purpose flour 1/2 cup vegetable oil 1 can creamed corn 1 cup large curd cottage cheese (any size will work) 2 cans mild green chili peppers 1/2 to 1 lb. shredded longhorn cheese Mix all ingredients well. Pour into a greased 13x9-inch pan. Bake at 375°F for approximately 1 hour (or until toothpick comes out clean). Let set 30 minutes before serving. Submitted by: Traci Cook |
