SPANISH RICE CASSEROLE 
1 lb. ground beef
1 medium onion chopped
salt and pepper, to taste
2 cups cooked rice
1 bottle Pace Chunky Salsa
1 small can sliced olives
1 to 1 1/2 cups sharp cheddar cheese, shredded

Preheat oven to 350°F.

Fry ground beef with onion (salt and pepper to taste). Cook rice. Mix all ingredients (except cheese) in a square baking dish. Bake in oven at 350°F for 40 minutes or until heated through. Add cheese over the top of dish at the last 10 minutes of baking. Take out of oven. Let stand for ten minutes before serving. Enjoy!
