CHICKEN BROWN RICE & RAISINS 
1/2 c. minute brown rice
1 c. raisins (brown)
2 skinless, boneless chicken breasts
1 tsp. parsley
1/4 tsp. garlic (or to taste)
1/4 tsp. salt
1/2 tbsp. butter
1 1/4 c. water

Poach boneless, skinless chicken breasts. Cook instant rice according to package directions for 1 1/2 cups of brown rice. Chop cooled breasts up in bits. Mix raisins, garlic, parsley, rice and chicken. Serves 4.
