FRESH APPLE CAKE 
1 c. vegetable oil
2 eggs
1 2/3 c. sugar
2/3 c. crushed pineapple with juice
1 1/2 tbsp. vanilla extract
2 c. flour
1 tsp salt
1 tsp. baking soda
2/3 tsp. cinnamon
2 c. peeled and chopped tart apples (Granny Smith)
1 c. chopped walnuts (optional)

Combine oil, eggs, sugar and pineapple in large bowl. Mix in remaining ingredients. Bake in greased and floured 10 inch tube pan (or bundt pan) in preheated 325 degree oven for 1 hour.
