VEAL PARMESAN 
4 veal cutlets, tenderized
Salt & pepper
Italian flavored bread crumbs
2 eggs, beaten
Olive oil
Mozzarella cheese
Grated Parmesan cheese

Salt and pepper cutlets. Dredge cutlets in egg and coat with bread crumbs. Brown cutlets in olive oil in 12" skillet. Drain. Place cutlets in 9"x13" dish. Lay a slice of Mozzarella cheese over each cutlet. Ladle spaghetti sauce over top. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 to 45 minutes.
