STUFFED ZUCCHINI 
4 med. size zucchini
1 lb. hot sausage (or mild)
1 clove garlic, chopped
Seasoned bread crumbs
Mozzarella cheese

Cut zucchini in half lengthwise. Parboil zucchini in small amount of water. Cool slightly. Hollow out zucchini and place the inside in a strainer.

In fry pan brown sausage (without casings) and garlic. Drain fat and add the inside of the zucchini. Stir until mixed. Add bread crumbs until mixture holds. Fill zucchini with stuffing. Sprinkle with mozzarella cheese. Bake 1/2 hour at 350 degrees.
