MARYLAND CRAB CAKES | |
3 tbsp. mayonnaise 1 egg 1 tsp. salt 1 tsp. dry mustard 1 tsp. dry parsley 8 Saltines 1 (16 oz.) can crab meat Mix together mayonnaise, egg, salt, dry mustard and parsley. Crush Saltines until fine crumbs. Add to first mixture. Pick over crab meat until free of shells. Fold into mayonnaise mixture. Make into small cakes, handling as little as possible. Chill at least one hour before frying. Fry until golden brown in heavy frying pan, turning once. |
