CHICKEN IN CHINESE MARINADE 
3-5 lb. chicken parts
2 tbsp. Hoisin sauce
2 tbsp. ketchup
1 tsp. Five Spices
1/2 c. soy sauce
1/2 c. sugar
1/2 c. sweet red wine

Mix all ingredients and marinate chicken for 6-8 hours (or overnight). Put chicken and marinade in baking pan and bake at 350 degrees for 1 1/2 hours. You can substitute chicken with beef, pork, or veal.

I would love to try this with chicken, pork loin and beef roast - but I hesitate - when it says to bake the meat - in the same marinade - that product rested in raw state overnight. Would this cooking temperature & time - make this a safe recipe????

Hi Phyllis,

It's OK to cook in the marinade as long as you cook it for at least 10 minutes (technically 3 minutes) at a temperature over 190°F - the liquid will be pasteurized.

If you prefer, you can bring the marinade to a boil for 3 minutes in a saucepan, allow it to cool and then add it to the pan.

But if you simply just add the marinade at the start of the cooking process and cook at 350°F for 1.5 hours you will be all set.
