ITALIAN MEATLOAF 
2 lbs. ground meat
2 eggs
1/2 c. seasoned Italian bread crumbs
1 c. tomato-vegetable juice
1 tsp. oregano
1/4 tsp. pepper
1/2 tsp. salt
2 sm. onions, minced
8 thin slices boiled ham
1/2 lb. Mozzarella cheese, grated
Ketchup (optional)

Combine all ingredients, except cheese and ham. Flatten meat mixture on foiled- lined jelly roll pan. Place ham slices evenly on top of meat mixture. Sprinkle with grated cheese. Holding one end of foil, roll up meat like a jelly roll. Remove foil. Slide meat roll to center of pan. Pat seams closed. Spread ketchup on top, if desired. Bake. Remove from oven; allow to sit in warm spot for 5 minutes before slicing. Bake at 350 degrees for 1 hour.
