FRIED RICE 
3 or 4 carrots
1 onion
1 lb. pork sausage
1 egg (optional)
1 tsp. soy sauce
3 or 4 stalks of celery
1 green bell pepper
1 can garden peas
1 1/2 c. cooked rice

Brown pork sausage; drain fat. Saute or stir fry carrots, celery, and bell pepper together. Add sausage and soy sauce; stir in egg. Then add 1 1/2 cups cooked rice. Simmer 2 minutes. You can also make this dish with chicken, hamburger, and seafood. Real good with shrimp or crab.
