SALMON PIE 
1 1/2 c. cooked rice
1 c. shredded Cheddar cheese
3 eggs
2 tbsp. finely chopped onion
1 (7 3/4 oz.) can salmon
2/3 c. finely chopped fresh broccoli
Milk
1/4 tsp. dried dillweed, oregano or chili powder
1/8 tsp. salt
Dash of pepper

Combine rice with cheese, 1 beaten egg and onion. Mix well. Press into a greased 9 inch pan. Drain salmon, reserving liquid. Remove skin and bones from salmon, flake salmon. Place salmon evenly over rice crust. Sprinkle finely chopped broccoli over salmon.

Add milk to the reserved liquid to equal 2/3 cup. Beat mixture together with the remaining 2 eggs, dill, salt and pepper. Pour egg mixture over broccoli and salmon.

Bake at 350 degrees for 40-45 minutes or until a knife in center comes out clean. Serves 6.
