SOUFFLED POTATO 
3 c. mashed potatoes
4 tbsp. soft butter
16 oz. sm. curd cottage cheese
1/2 c. sour cream
2 eggs, beaten
2 tsp. salt
1/8 tsp. cayenne pepper
1/2 c. green onions, chopped fine
1/4 c. Parmesan cheese
Chopped parsley
Paprika to sprinkle

Preheat oven to 425 degrees. In large bowl, blend potatoes and butter. Beat in cottage cheese, sour cream, eggs, salt, cayenne pepper and onions. Pour in casserole. Sprinkle with Parmesan cheese. Bake 50 minutes. Garnish with parsley and paprika.
