POLENTA AND SAUSAGE CASSEROLE | |
2 lbs. Italian sausage 2 tbsp. oil 2 cans tomato sauce 1 can tomato paste 1 med. onion, chopped 1/2 tsp. black pepper 1 clove garlic, chopped 1/4 tsp. red hot pepper 2 c. cornmeal 6 c. water 1 tsp. salt SAUCE: Cut sausage into small pieces (1"). Fry in hot oil until brown. Remove grease, add tomato paste, sauce, onion, garlic and pepper. Cook slowly for an hour, water may have to be added. POLENTA: Put water in large heavy pan, bring to a boil, add salt and 1 cup cold water. Stir in cornmeal slowly and stir until smooth. |
