MICROWAVE POLENTA 
3 c. water
1 c. cornmeal
2 tbsp. butter
1 tsp. salt

Place all ingredients in a 2 quart microwave safe bowl. Cover with waxed paper. Microwave on High for 8 minutes, stirring every 2 minutes. (This time is for a 700 watt oven, smaller ones will require more time.)

Turn polenta out onto foil covered board or plate. Fold foil over and press lightly to form polenta into a square. To serve, remove foil and sprinkle with Parmesan cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Is it just me, or is 8 minutes very short time? I gave it about 12 minutes, used 2c milk and 2c water. Added 1/2 cup each creamy chevre and gorgonzola. Excellent, and without the constant stirring.
