PERFECT PANCAKE BATTER 
1 c. flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 c. milk (more if it's buttermilk or if batter is too thick)
1 egg, slightly beaten
2 to 4 tbsp. melted butter

LESS STIRRING MAKES BETTER BATTER. In a deep, narrow bowl, mix dry ingredients. Add wet ingredients, stirring only enough to mix. Allow batter to rest for 20 to 30 minutes. Then cook 'em on the griddle.

Makes 6 to 8 pancakes.
