1. How much charcoal to use: There should be enough charcoal to extend 2" beyond the food to be cooked when it is spread in a single layer. 2. What is the correct temperature? The coals are close to the right temperature if you can hold your hand 4" to 5" above the coals for 3 seconds without the heat forcing you to pull away. 3. When are the coals ready? You are ready to begin cooking when the charcoal is covered with a fine white ash. |
