TIA ELISA'S QUEQUE 
3 eggs
1 c. sugar
2 c. raw, grated zucchini
1 c. raw grated carrots
1 tsp. vanilla
1/2 tsp. salt
1 tbsp. cinnamon
3 c. sifted flour
1 tsp. baking powder
1 c. nuts

Beat eggs and oil, add sugar; cream thoroughly to avoid an oily taste. Add remaining ingredients and stir a little, enough to mix. Pour into greased and floured loaf pans. Preheat oven at 325 degrees and cook for 55 to 60 minutes. It makes 2 loaf pan.
