CHICKEN CREPES | |
Crepes - buy or make your own to serve 4 to 5 people 1/4 c. butter 1/4 c. flour 1/2 tsp. salt 1/2 tsp. pepper 1 3/4 c. milk 1 (5 oz.) can boned chicken, cut up 1 (2 1/2 oz.) jar mushrooms, drained & chopped 3 tbsp. sherry 1 c. grated sharp cheddar cheese 1 (15 oz.) can extra long green asparagus spears, drained In medium saucepan melt butter; stir in flour, salt and pepper until smooth. Stirring constantly, slowly add milk and cook over medium heat until thickened. Add chicken, mushrooms, sherry and 3/4 cup cheese; cook until cheese is melted. Place 2 asparagus spears atop each crepe; top with 2 to 3 tablespoons sauce. Roll up and place seam side down in shallow 3-quart baking dish. Top with remaining sauce and cheese. Bake in 350 degree oven for 10 to 15 minutes or until heated through. Serves 4 to 6. |
