CHOCOLATE MUFFINS 
1 1/2 c. all-purpose flour
1/2 c. cocoa
1/4 tsp. salt
1/3 c. sugar
3 tsp. baking powder
2 eggs
3/4 c. milk
1 tsp. vanilla
4 tbsp. (2 oz.) melted unsalted butter

Butter muffin tins. Sift flour, cocoa, salt, sugar and baking powder in bowl. In separate bowl, beat eggs lightly then beat in milk, vanilla and melted butter. Add liquids to dry ingredients and stir. Spoon into tins (3/4 full). Bake at 425 degrees for 15 to 20 minutes.

Remove and serve with butter. Makes 24 muffins.
