POKE SALLET | |
Pick poke when it's small enough to be tender. It grows wild in Alabama and Georgia. Parboil in enough water to cover greens. Cook until leaves are tender. Drain water off. In skillet, cook 4 strips of streak o lean (or bacon) to get the grease. Remove meat and add drained greens, stirring well. Break two eggs into greens and scramble all together. It's very tasty. Dennis's Mother, Aunt Rosalee, told me this one. |
