WHITE BEAN SALAD 
1 lb. kidney beans
1 onion, peeled & quartered
1 bay leaf
Salt & freshly ground pepper

Put beans in a pot with water to cover. Bring to a boil, drain and cover again. Simmer, covered for 1 hour. Add the onion, bay leaf and salt & pepper. Cook about 1 hour more, until beans are just tender. Rinse, drain and cool.

MARINADE:

Pinch of salt
1 tbsp. onion, minced
1 tbsp. green pepper, minced
1 tbsp. parsley, minced

Mix ingredients together. Gently fold into the cooled beans, chill and serve on lettuce.
