MICROWAVE FRUIT LAYERED
CHEESECAKE
 
1 (9 inch) crust
1 (8 oz.) pkg. cream cheese
1/3 c. sugar
1/2 tsp. lemon or almond flavoring
1 egg
1 c. sour cream
2 tbsp. sugar
1/2 tsp. almond flavoring
1 (21 oz.) can fruit pie filling

Prepare crumb crust. In medium glass bowl soften cream cheese (high) 30 seconds. Blend with sugar, flavoring and egg. Pour into cooked pie crust. Microwave (high) 3 to 4 minutes, rotating 1/4 sugar and almond. Spread evenly over pie.

In same bowl, combine sour cream, sugar and almond. Spread evenly over pie. Microwave (high) 2 to 3 minutes, rotating 1/4 turn halfway through cooking. Pour pie filling evenly over top. Chill until serving. Serves 5 to 6. Cherry, blueberry and peach fillings are favorites.

MICROWAVE CHEESECAKE CRUST:

Crumb pie crust - select flavors to enhance filling
1 c. crushed crumbs (graham crackers, vanilla wafers, corn flakes, etc.)
2 to 3 tbsp. sugar
1/4 c. butter

Combine ingredients in 9 inch glass pie plate. Heat (high) 2 minutes, stirring once. Press evenly onto sides and bottom of dish. Heat (high) 1 minute to "set" crust. Makes 1 (9 inch) crust.

Since microwave ovens vary in power, you may need to adjust your cooking time.
