HALUPSI (PIGS IN THE BLANKET) 
1 lg. loose head of cabbage
1 lb. ground beef
1 c. shredded cabbage
3/4 tsp. salt
3/4 c. uncooked rice
1/2 tsp. pepper
1/2 c. diced onions
1/4 c. green pepper
1/4 c. diced carrots
1/2 c. sour cream
1/2 c. canned tomato soup

Parboil the head of cabbage. Separate leaves and set aside. Mix together shredded cabbage, rice, onions, pepper. Form mixture into loose (not too solid rolls) leaving room for the rice to expand, wrap each roll in a cabbage leaf, fasten with toothpick.

Place in a greased casserole, pouring over 1/2 cup water. Bake 90 minutes at 350 degrees. Stir the tomato soup and sour cream together. Pour on top and bake 30 more minutes at 300 degrees. Cover. Serves 4-6. A favorite Nikolas recipe from Aberdeen, SD.
