SHAMI KEBABS 
1 lb. "A" quality ground beef
1/2 c. chick peas
1/2 c. mashed potatoes
1 tsp. garlic powder or 4 cloves finely chopped fresh garlic
2 lg. onions, finely chopped
1 1/2 tsp. garam masala
1/2 tsp. cumin powder
1/2 tsp. ground ginger powder or 1 1/2 c. fresh gingerroot, finely chopped
1/2 tsp. ground black pepper
1 or 2 eggs (optional)
1/4 tsp. ground red pepper
1/2 tsp. ground coriander
2 med. size fresh green chilies, finely chopped
1/2 bunch fresh parsley, finely chopped

Chop onions finely, as small as possible. Mash chick peas from can. Mix all ingredients thoroughly or put the mixture through a meat grinder 3 to 4 times. Shape into round patties. Dip each round pattie or Kebab (choice A) in well-beaten egg white or (choice B) in white flour, then pan fry until brown on both sides.

Pan fry can be substituted by using the oven on "Broil" or on the charcoal barbecue.

Serve hot. Squeeze fresh lemon juice on top of Shami Kebabs. Can also be served with hot Syrian bread available at Steinberg's, Dominion Stores and other food stores. Serve with mint sauce and Indian sauce. Quantity obtained. 14-16 Shami Kebabs.
