TOFU LASAGNA 
1 lb. firm tofu, drained & mashed
1 lb. lasagna noodles
1/4 c. Parmesan cheese, grated
1 tsp. onion powder
1 tsp. garlic powder
1 tbsp. parsley, chopped
1 tbsp. basil
1/2 tsp. salt
1 qt. spaghetti sauce
8 oz. Mozzarella cheese, grated

Preheat oven to 350 degrees. Boil lasagna noodles for 5 minutes. Add 2 tablespoons vinegar and 1 tablespoon oil to boiling water. Drain noodles and rinse thoroughly with cold water.

Drain and mash tofu. Combine tofu with Parmesan cheese, onion, powder, garlic powder, parsley, basil and salt. Blend well.

Oil the bottom and sides of a 9"x13" pan. Arrange a layer of lasagna noodles. Spread enough tofu mixture to cover noodle layer, then cover with sauce. Repeat this layering until all ingredients are used. Top with grated Mozzarella cheese. Bake for 30 minutes.
