RED VELVET CAKE 
2 1/2 c self rising flour
1 c buttermilk
2 c sugar
1 t salt
1 t soda
1 t vinegar
1 t vanilla
2 t cocoa
2 eggs
1 bottle Red Coloring
1 c Crisco Oil

Frosting:

1 large and 1 small Cream Cheese
1 1/2 box Powdered Sugar
1 stick butter
1 1/2 t vanilla
1 1/2 c chopped pecans
1 1/2 c chopped pecans

Cream sugar and oil, add dry ingredients. Add eggs, vanilla, and food coloring. Mix well. Add vinegar to buttermilk, let stand one minute, and add to batter. Grease and flour three pans.

Bake 30 minutes at 375°F.

FROSTING: Mix all ingredients well, and spread on cooled layers.
